Crock Pot Orange Teriyaki Chicken for Two

Ingredients
4 boneless skinless chicken thighs1/4 cup soy sauce2 tbsp mirin (rice wine)2 tbsp brown sugar1 Crushed garlic cloveZest of 1 whole orange1 inch ginger piece peeled and sliced or shaved
Directions
Heat skillet over stove on Med-High. Spray w/ cooking spray. Add chicken w/ smooth side down, brown for 2-3 minutes then turn.

Spray crock pot with cooking spray. Put chicken in crock pot.

Heat sauce in skillet. Add sauce over chicken in crock pot. Cook on high for 2.5 - 3 hours, or on low for 6 hours.

Serve over brown rice. Makes two servings.
