Chewy Granola Energy Bars with Dried Fruit

Ingredients
2 cups oatmeal2.5 cups Rice Krispies1 cup raisins2 cups dried fruit (diced) 1 cup sunflower seeds1/4 cup margarine1/2 cup peanut butter35 regular marshmallows
Directions
Line a 9X13 pan with wax paper or spray with cooking spray.
In a 350 degree oven - toast sunflower seeds until fragrant. Also toast oatmeal, Rice Krispies and raisins for 5-10 min (optional).
Combine oatmeal, rice cereal, raisins, dried fruit, and sunflower seeds. Mix well and set aside.
In a large stovetop pan (dutch oven) - melt margarine, peanut butter and marshmallows over low heat - stirring till smooth.
Add oatmeal mixutre and stir with a spatula.
Firmly press into pan. (I find a potato masher rinsed in hot water works really well for this).
Once cool - flip pan over onto a cutting surface.
Remove wax paper if used.
Cut into 1 X 3 inch bars (39 pieces).

I have made many variations on these - using whatever is on hand. I usually throw in a couple of tablespoons of ground flaxseed as well.
