Vegetable Chili

Ingredients
1 T Olive Oil1 Med Onion Chopped1 Sweet Red Pepper, chopped into 1 - 2 inch pieces1 Green Pepper, chopped into 1-2 inch pieces2 Cloves Garlic1 T Chili Powder2 t Cumin1 16 oz can whole tomatoes1 19 oz can of red kidney beans, drained and rinsed1 19 oz can of black beans, drained and rinsed1 cup frozen corn1/4 t salt
Directions
Heat oil
Add onion, peppers and garlic - cook 5 minutes
Add Chili Powder and Cumin - stir 30 seconds
Stir in beans, corn and salt
Cook for about 20 minutes

Makes about 6 servings
Can be put over a little pasta or topped with cheese if desired.
