Autumn Tuscany Chicken (crock pot meal)

1/2 pound butternut squash, peeled and cut into chunks1/2 pound boneless skinless chicken breast, but into chunks1 small green bell pepper, but into chunks3 Tbsp salsa5-oz canned diced tomatoes, undrained4 tsp golden raisins1/8 tsp cumindash of ground nutmeg1/2 clove garlic, pressed dash of ground cinnamon5-oz canned garbanzo beans, rinsed & drained
In a crock pot, combine all ingredients except garbanzo beans. Cover and cook on low for 7-8 hours. 15 mins before you are ready to serve, turn crock pot to high and add garbanzo beans. Cover and cook until beans are heated through.

Yes, this is definitely not a second day meal! I guess I'm just lucky not to have such a picky DH, lol. A lot of people don't like garbanzo beans, so I might try it next time with baby potatoes and see how it turns out.
