Chicken, Spinach & Mushroom Linguine

Ingredients
8 ounces linguine1 cup sliced fresh mushrooms1/2 cup sliced celery1 Tbsp butter2 Tbsp cornstarch1 cup chicken broth1/2 cup dry white wine or sherry2 tsp lemon juice1/4 tsp dried thyme, crushedfew dashes hot sauce1/2 cup shredded mozzarella cheese12 oz cooked chicken breast, cut into strips1 cup fresh spinach, chopped4 Tbsp shredded parmesan cheese
Directions
1) Prepare linguine (omitting salt from cooking water). Drain; keep warm
2) Melt butter in large saute pan over medium heat
3) Add celery & mushrooms, cooking until tender
4) Stir in cornstarch
5) Add chicken broth, white wine, lemon juice, thyme & hot pepper sauce. Cook & stir until bubbly & beginning to thicken
6) Stir in mozzarella until melted
7) Add chicken & spinach; cover & cook 1 minute or until heated through
8) Serve over linguine, sprinkling 1 Tbsp of parmesan over each serving
