Healthy Veggie omelet on Corn tortilla

Ingredients
2 cups fresh mushrooms1.5 serving Oil Marinated Artichoke drained/rinsed1/2 cup chopped green peppers1 fresh garlic clove2 strips of rosted red peppers 2 TBLS Olive Oil4 servings of Egg Substitute2 servings fat free shredded cheddar cheese8 corn tortillas (2 per person)
Directions
Stir fry all veggies in olive oil. remove from skillett. Then spray with cooking spray and add egg to skillett and sprinkle cheese. Cook omelet until done. Divide into 4 sections.
Cut each section into 2 for a person and use 2 tortillla, warmed. Add 1/4 of the veggie mixture on top. Roll tortillla. Add jalapeno and sulsa as desired.
