Shrimp Teriyaki Soba Noodles

Ingredients
Directions
Olive Oil, 1 TBLShrimp, raw, 12 medium Broccoli, fresh, 2 cupsOnion, raw, 1 cupGarlic, 6 clovesGinger Root, 2 tsp Snow Peas, fresh, 1 cup Red Pepper, sweet, 1 large Salt, 1 dashSAUCE-----Imagine Low Sodium Beef Broth, 1 cup 365 Organic Teriyaki Sauce, 2 TBLCorn Starch, 1 TBLNakano Seasoned Rice Vinegar, 1 TBLSesame Oil, 1 tspSriracha Hot Sauce (Rooster sauce), 2 tspLa Choy Soy Sauce (Low sodium), 1 TBLSoba Noodles, 2 cups (cooked)
Sauce:
Wisk sauce ingredients together and set aside.
Noodles:
Cook noodles in salted water. Drain and set aside.
(Salt added to cook noodles is not included in nutritional count. Since this recipe is already high in sodium, the noodles should probably be cooked in plain water.)
Shrimp & Veggies:
Clean shrimp & remove tails and/or shells.
Chop broccoli, onion and pepper. Clean and de-string pea pods.
Mince garlic and ginger root.
Stir fry onion and pepper in oil until starting to sweat. (Add a dash of salt to help the onions sweat.) Add broccoli, pea pods, garlic and ginger. Stir fry for about 1 minute. Add about 1/4 cup of water, COVER and steam for about 2 minutes.
Add Shrimp to mixture and stir until pink.
Add noodles and sauce...stiring until thickened.
Sodium 1028 mg. (not including salted water to boil noodles)
Serves 2.
