8 wonton wrappers3/4 cup low fat ricotta2-4 tsp splenda1/2 tsp ground cinnamon1/2 tsp cocoa powder + extra for garnish1/4 tsp vanilla extract2 Tabs chopped dark chocolate + extra for garnishConfectioners sugar for garnish
1. Heat oven to 350 degrees. Lay the wonton wrappers on your work surface. with a damp paper towel or pastry brush, wet one edge of one wrapper and fold it over to the other edge, forming a cylinder. Press the edges together and stand the roll upright on a baking sheet. Repeat the process with the rest of the wrappers. Bake them until golden brown, about 10 minutes. Allow them to cool on the baking sheet for 2 minutes. Then remove them to cool completely.
2. Place the ricotta and sugar in a medium bowl. Beat with an electric mixer on hight for 3 to 4 minutes. Beat in the cinnamon, 1/2 tsp of cocoa, and vanilla. Stir in the 2 tabs of chocolate.
3. Fill a pastry bag with the ricotta mixture. Pipe the filling into the cooled rolls. Lightly dust them with the confectioner's sugar and extra cocoat and the sprinkle the extra chocolate around the serving plate.
