Quick fried brown rice

2 cups Instant brown rice (prepared as instructed on box)1.5 cups frozen peas and carrots2 large eggs2tbsp stir fry sauce **or soy sauce w/splash of rice vinegar1 tbsp cooking oil
After fluffing instant rice, stir in frozen peas and carrots to thaw
In a skillet or wok, add 1tsbp oil and the rice mixture
make a well in the center of the rice, crack two eggs into it, and scramble, gradually mixing into the surrounding rice mix
Stir in soy sauce or stir fry sauce
Makes 6 servings (about 1 cup per serving)
