Cuban Black Bean Soup

Ingredients
3 cups dry black bean soak- over night or 2 cans drained4 cups low sodium chicken broth3 sweet italian chicken sausages cut upsmall onion choppedsmall red peper choppedlarge carrot chopped1/2 tsp cumin3 bay leaves1 can tomato paste1 tbs spoon sherryserve with cheddar cheese on top or sour cream
Directions
makes 8 -1 cup servings
in large cooking pot- sautee chicken sausages med heat- cook till no longer pink
add onion, pepper and carrot, and garlic- sautee 3 minutes
add chicken broth and beans- bring to boil- lower to simmer
add cumin, bay leaves and sherry
simmer 2 hours or till -beans are soft add more chicken broth or water if needed
add tomato paste cook 10 minutes more
serve with cheddar cheese on top, or sour cream ( calories not included in recipe)
serve with corn bread on side
this also freezes nicely if you have any left overs
