Shredded BBQ Chicken Salad

Ingredients
1/2 pound of chicken tenderloin1 cup of Cattlemen's Texas Smoky Barbecue sauce1 cup Grape Tomatoes2 cups Romaine lettuce, Shredded1 Bell Pepper, yellow strips1/4 cup sweet corn kernels1/2 Haas avocado, sliced
Directions
Makes 2 salads.

Bring chicken to a boil and cook over med heat for 30 minutes. Drain chop and shred chicken and return to pot with barbecue sauce and simmer on med low, stirring often, for ten minutes or until barbecue sauce thickened to a glaze.

Place 1 cup of romaine on each plate and center half of the chicken barbecue on the romaine. Add remaining toppings to your salads.
