Breakfast Egg Muffin

Ingredients
2 c egg white (or egg subtitute)1 whole egg1/4 c diced extra lean ham1/4 to 1/2 c bell peppers, red, green, yellow1/4 c shredded low fat cheddar cheese1 Tbs onion1/4 c chopped mushrooms
Directions
makes 12 regular sized muffins
prehead oven to 350 deg. F
spray muffin tin with oil (or use silicone cups).
Mix all ingrediants in 4 c measure or bowl. Pour into muffin pan, bake for 18 - 20 minutes or until toothpick comes out clean. Keeps in refrigerator for 1 week.
