African Cabbage Salad

Ingredients
Ingredients:Cabbage, red or green, 4 cup, shredded Carrots, raw, 1 cup, grated Pineapple, fresh, or canned 1 cup, diced Orange Juice, 2 Tbsp*Lemon Juice, 2 Tbsp*Canola Oil, 2 Tbsp Salt, 1/2 tsp
Directions
Combine cabbage, carrot and pineapple in a large bowl. Combine the orange juice, lemon juice, salt and oil in blender, bowl or food processor. Whisk, blend or otherwise combine salad dressing and then pore over salad. Mix well and refrigerate until ready to serve.

I find it looks the best when served right after making, but tastes the best the next day.

Makes 6 servings of about 1 cup each.
