Olive Oil, 2 1tsp Onion medium, 2 (2-1/2" dia) Carrots, raw, 1 cup, chopped Broccoli, fresh, 1 cup, chopped Cauliflower, raw, 1 cup Chicken Breast, no skin, 0.5 breast, bone and skin removed Canned Tomatoes, 1 can Salt, .5 tsp Pepper, black, .5 tsp Garlic, 3 cloves Italian Seasoning 2 tsp.
Heat the oil in a large nonstick skillet over medium-high heat. Add the vegetables and garlic; cook, stirring occasionally, until softened, about 10 minutes. Add the chicken and cook, stirring occasionally, until opaque, about 5 minutes. Stir in the tomatoes, italian seasoning, salt, and pepper. Reduce the heat and simmer, stirring occasionally, until the flavors are blended and the chicken is cooked through, about 10 minutes. Yields about 2 cups per serving.
