.5 cup applesauce1 cup white sugar1 large egg1 cup persimmon pulp1 cup whole wheat flour.5 tsp. baking powder.5 tsp baking soda.5 tsp. ground cinnamon.3 tsp. ground clove.5 tsp. salt.5 cups chopped walnuts
1. Preheat oven to 350 degrees. Grease cookie sheets.
2. In a large bowl, mix together applesauce and sugar. Beat in the egg and persimmon pulp. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the persimmon mixture. Fold in walnuts. Drop by teaspoonfuls 2 inches apart onto the prepared cookie sheets.
3. Bake for 12 - 15 minutes in the preheated oven, or until edges are firm. Let cool on the cookies sheets for 1 minute before removing to wire racks to cool completely.
