Salmon and green bean salad

Ingredients
for 1 serving:3 oz salmon6oz green beans1 oz fresh baby spinachabut 10 cherry tomatoes, halved1 scallion, chopped1 tablespoon capersjuice of one lemoni clove garlic, crushed1 teaspoon olive oil1 teaspoon dijon or seed mustardi tablespoon chopped flat leaf parsley
Directions
Blanch beans in boiling water for 3-4 mins, remove from water and rinse with cold water. Poach salmon in same hot water for about 5 mins. Combine spinach, tomatoes, parsley, capers and green beans, add salmon. Pour over combined olive oil, mustard, garlic, mustard and lemon juice. Season with slat and pepper.
