Shrimp and Corn Bisque

2 tablespoons butter 1 medium onion, finely diced1 teaspoon garlic, minced2 oz tomato paste10 oz shrimp stock (instead of chicken broth)10 oz heavy cream1 lb peeled shrimp10 oz cut corn, canned1/2 teaspoon cayenne pepper (optional)salt and black pepper to taste
1. Saute onions in melted butter until slightly browned
2. Add minced garlic, and then saute' 2 minutes
3. Add tomato paste and stir into onion and garlic, let cook about 2 minutes
4. Add shrimp stock and drained sweet corn. Heat through
5. Add shrimp and bring just to a simmer . Add heavy cream and heat through.
6. Season to taste with salt, black pepper, cayenne and hot sauce as desired.
