Swiss Chard Italian Wraps

Ingredients
12 medium to large leaves of swiss chard (red or green), rinsed well; cut out the thickest part of the stem (about 1/3 of the way up from the bottom of the leaf)4-5 oz sliced or shredded part-skim, low-moisture mozzarella12 tsp tomato paste3 large (or 6 small) tomatoes, quartered1 tsp (approx) salt-free herb seasoning mixsalt to taste (optional)
Directions
Place 4 leaves (still fairly wet from being rinsed) on a microwave-safe plate and microwave on HIGH for about 25 seconds.
Lay the leaves face-down on a non-stick jellyroll sheet (or similar) with stems lined up from north to south.
Lay 1/4 ounce of the cheese in the center, in a 2-inch-long rectangle, from north to south.
Spread 1 teaspoon of the tomato paste over the cheese, then top with 2 tomato quarters (if using small tomatoes) and sprinkle with about 1/16th teaspoon of the herb seasoning over the tomato filling.
Fold north and south ends of leaf over the filling, then fold in the sides to create a burrito-like wrap.
Place on jellyroll pan, stem side up.
Repeat with remaining leaves and filling.
Preheat oven to broil.
Broil, with pan about 6 inches from the flame, for 2 minutes.
Flip wraps over and broil the other side for 2 minutes more. Sprinkle with salt over the top, if desired.
Yield: about 6 servings (2 wraps per person)

    My husband and I have been using Swiss Chard and Collard greens for roll-ups for a couple of years now. Great, tasty meals with far less calories than using tortillias. We use all sorts of fillings, anything you can put in a regular roll-up. - 8/16/09

    Sounds very much like a cabbage roll. Yum. Perhaps adding shredded carrot, onions and garlic would be great. And possibly for fiber add oats, bran or brown rice. - 8/16/09

    This sounds delish! We use lettuce leaves for cold filling wraps so this is a great idea for hot filling wraps and we love swiss chard, I was going to start growing it this next summer. By the way a jelly roll pan is nothing fancy basically a cookie sheet with about half to one inch side to it. - 12/27/09

    nice idea but I did not like the flavor of the chard. The tomato paste was a little overwheling, maybe if I'd used less? The leaves didn't hold up well and I had a difficult time wraping them up without tearing the leaves. I'm glad I tried it though, thanks for sharing! - 10/6/09
