high protein pancakes

Ingredients
1 cup greek yogurt (plain or vanilla)1 cup low fat ricotta or cottage cheese3 eggs1 cup self rising flour (or all purpose flour plus 1/2 tsp baking soda)1/4 cup milkpinch of salt (if desired)
Directions
Mix all ingredients. Preheat skillet coated with butter or nonstick spray. Pour batter on to skillet 1/4 cup at a time. Turn pancakes when edges are dry and tops begin to bubble. Makes 4 servings of 3-4 pancakes.
