Baked Pesto Chicken

Ingredients
4 boneless, skinless chicken breast halves1/2 cup refrigerated basil pesto2-3 plum tomatoes, sliced (optional)1/2 cup shredded mozzarella cheese
Directions
Preheat oven to 400 degrees. Line baking sheet with heavy-duty foil. Place chicken and pesto in medium bowl, toss to coat. Place chicken on prepared baking sheet. Bake for 20-25 minutes or until chicken is no longer pink in the center. Remove from oven, top with sliced tomatoes and cheese. Bake for an additional 3-5 minutes or until cheese is melted.

    This is a great recipe to break down for one person. Also, if I slice the chicken I find I can use about half the pesto and lose none of the flavor - which means more pesto for later dishes! - 1/23/13

    I have loved this recipe since I first came across it on allrecipes.com. I use Classico pesto - delicious!! - and I find that using grape tomato halves creates a fancier appearance and imparts better flavor and texture than plum tomatoes. So yummy! - 6/20/12
