Spicy Chickpea Stew Over Brown Rice

Ingredients
* Spinach, frozen, 1 package (10 oz) * Chickpeas (garbanzo beans), 3 cup * Canned Tomatoes, can (24 oz) * Celery, chopped, 2 stalk, large (11"-12" long) * Carrots, chopped, 3 large (7-1/4" to 8-1/2" long) * Onions, chopped, 1 large * Chicken Broth, 2 cup (8 fl oz) * Hot Pepper Sauce, 4 tsp * Oregano, ground, 1 tbsp * Garlic, 3 cloves, minced * *Cumin (ground), 1 tsp * Chili powder, 1 tsp * *Rice, Kraft Minute Whole Grain Brown Rice, 3 cups * Olive Oil, 1 tbsp
Directions
Makes 10, 3/4 - 1 cup servings

1. Add olive oil to a large pot on medium high heat. Add garlic, onions, celery, and carrots. Saute for 3 minutes.

2. Add chicken broth, tomatoes, chickpeas, hot pepper sauce, oregano, cumin, and chili powder. Let simmer for 20 minutes, stirring occasionally.

3. Add spinach. Cook the dish until the carrots are tender (10-15 minutes).

4. Prepare minute rice per directions on the box for the number of servings that you want to use. The calories in this recipe are for about a half cup serving of prepared brown rice.

5. Serve a 1 cup serving of the stew over a half cup serving of brown rice. Add hot sauce to taste.
