Chicken and Pepper Salad with Cucumbers

Ingredients
4 oz. boneless chicken breast1 tbsp. mayonnaise1 tsp. Dijon mustard1/2 medium red bell pepper1/4 cup chopped onion1 cup chopped or sliced cucumber1/2 tbsp. olive oil1 tsp. red wine vinegar
Directions
Chop chicken into bite size pieces. Rinse and finely chop red pepper. Mix chicken with chopped peppers, onions, mayonnaise and mustard until well blended. On a plate, layer the cucumber slices and top with chicken salad. Drizzle with olive oil and vinegar.
