2 small Ripe Avocados1 medium Red Tomato, de-seeded and diced1 Garlic Clove, minced1/4 cup Lime Juice1 Jalapeno Pepper, finely diced1 Tablespoon Fresh Cilantro, chopped1/4 Teaspoon Sea Salt
MAKES 6 SERVINGS:
Wash Avocados, cut down the middle, remove the pit, and scoop the pulp into a small mixing bowl.
Add the diced fresh Tomato, minced Garlic, Lime Juice, diced Jalapeno Pepper and chopped fresh Cilantro. Salt to taste. Mix well and chill before serving.
SERVE WITH ENCHILADAS WITH SOUTHWESTERN SAUCE, MIXED SALAD AND SLICE OF TOFU CORN BREAD, OR JUST USE AS A DIP.
