Ingredients
Collard Greens:1 lb pkg Collard Greens1 can Low Sodium Chicken Broth1 1/2 cups Water3 tbsp Extra Virgin Olive Oil1/4 tsp Salt1/4 tsp Pepper1/2 tsp Sugar1 lb Whole Wheat PastaStirFry:3 tbsp Extra Virgin Olive OilMedium Onion, Chopped2 tbsp Minced Garlic10 oz jar Mushrooms, Sliced in 1/21/4-1/2 tsp Crushed Red Pepper Flakes1 1/2 lbs Boneless Skinless Chicken Breast, Sliced Thin
Directions
Wash Collard Greens, Bring chicken broth, water, olive oil, salt & pepper to a boil in medium size pot. Add sugar & greens. Bring to a boil again. Cover pot & cook on medium heat for about 15min. Remove with slotted spoon & drain, saving 1/4 cup of the water. Set aside.
Cook pasta as directed on box
Meanwhile, heat olive oil in large skillet over medium heat. Add garlic, onion & mushrooms, stir & cook until onions are clear, about 5-6min.
Add collard greens & reserved water to skillet & toss mix well. Add drained pasta to skillet & mix well.
Plate & sprinkle with parmesan cheese if desired
