Eggs Goldenrod

Ingredients
1 hard boiled egg3/4 c skim milk1/4 c fat free half and half1 pat of buttersalt & pepper to taste1 tbsp cornstarch2 slices of light wheat bread (approx 80 cals for 2 slices)
Directions
Hard boil an egg and chill enough to peel it. Cut the egg in half and remove the yolk. Put yolk on a small plate and smash to fine powder consistency. Chop the egg white on a cutting board and set both the yolk and the white aside.

In a small sauce pan bring the milk, half & half and butter to a boil. Mix the cornstarch with a little bit of water and stir slowly into the milk mixture to thicken it to a sauce. Stir in the egg white. Add salt and pepper to taste.

Divide mix evenly over the toast. Sprinkle the yolk over the top of the sauce.

Makes 1 serving.
