Tri-Color Gnocchi Skillet with Garbanzo Beans & Spinach

Ingredients
896 grams frozen spinach3/4 whole or 80 grams chopped onion1 Tbsp olive oil5 grams minced garlic (lg clove)237 grams/1 can garbanzo beans rinsed1 lb pkg tri-color gnocchi1 can Ro*Tel diced tomatoes & chilies
Directions
Boil gnocchi. Drain, set aside. Meanwhile saute onion & garlic in olive oil until onion is transparent. Thaw frozen spinach in microwave while sauteing onion & garlic. Add all ingredients in a lg skillet simmer for 5-10 mins. Enjoy!

Makes 1730 grams/about 6 cups. Each serving approx 1 cup/288 grams.
