Crockpot "Rotisserie" Chicken

Ingredients
1 3-3 1/2 # whole chicken1t garlic powder1/2 t black pepper1 lemonAluminum Foil
Directions
Make 4 or 5 balls of aluminum foil about the size of ping pong balls and place them in the bottom of the crock pot..
Place bird on cutting board and remove skin. This takes a little practice but the wings are usually the only part that will not skin.
Cut lemon in half and pierce the flesh of the lemon with a fork. Squeezing gently rub the bird with the lemon. Place lemon pieces in the cavity of the bird.
Sprinkle the garlic powder and pepper on the chicken.
Place in the crock pot cook for 6-8 hrs on low

    I would have like this to be more flavorful. Next time I will try to infuse it with different herbs. I really liked the way the meat literally fell off of the bones. I did thicken was little juice there was to make some gravy-which helped the white meat as it was a little dry. My kids enjoyed it. - 1/18/10
