Morning Glory Muffins

Ingredients
2 cups flour1 1/4 C. sugar2 tsp. baking soda2 tsp. cinnamon1 tsp salt2 C grated carrots1 C raisins1 C shopped pecans1/2 C sweetened shredded coconut1 apple, peeled, cored, grated3 large eggs1 C Canola oil2 tsp. vanilla
Directions
Sift dry ingredients, Beat eggs, oil & vanilla. Stir into dry ingredients. Add the rest. Stir until just blended. Spoon into well greased muffin tins. Fill to the top. Bake in pre-heated 350 degree oven for 30-35 minutes. Cool five minutes in tins before turning out to cool completely.

Makes 15 -20 muffins depending on size of tins.
