Apple-Banana Oat Muffins

1 Cup Whole Wheat Flour3/4 Cup Quick Oats1 tsp Baking Powder1 tsp Baking Soda4 Ripe Bananas2 Granny Smith apples, diced1 tbsp. Vanilla1 tsp. Molasses1 tsp Cinnamon1 Egg1 (6oz) Apple Sauce
1. Combine flour, oats, baking powder, baking soda, apple sauce, 1 egg, and mashed ripe bananas in a bowl. Set aside.
2. Next, peel, core, and dice the apple into cubes. Add vanilla, cinnamon, brown sugar, and molasses. I recommend a squirt of lemon juice on the apples just to keep them from oxidizing but this is personal preference. Stir together and Microwave on high for 1 minute or until apples are softened slightly.
3. Now, mix the apple contents into your bowl you set aside of your dry mix.
4. Combine and spoon into well greased cupcake/ muffin tins.
5. Your size of muffin will depend on amount of batter so size accordingly as this recipe has a serving size of 18.
6. Finally bake at 350 for 20-25 minutes or until toothpick comes out clean.
7. Place on cooling rack and enjoy!!
