Quinoa Pudding with Raisins

Ingredients
1 1/2 cups water1 cup quinoa3 eggs, lightly beaten2 cups milk1/2 c. maple syrup1 tsp vanilla1/2 tsp salt1 cup raisin1/2 tsp cinnamon1/2 tsp nutmeg
Directions
Heat oven to 325. Boil water in pan, than add quinoa. Cook till water absorbed, or about 15-20 min. Let quinoa cool slightly.

Mix remaining ingredients together, that add quinoa.

Bake in Bain Marie or other pan full of hot water) for 25 min. Stir than cook an additional 25-30 min or until knife comes out clean

Cool on wire rack and serve warm or cold with berry sauce or ice cream.

Store covered in fridge.
