omelette with spinach and mushrooms

Ingredients
* egg white, fresh, 3 large (remove) * Spinach, fresh, 1 cup (remove) * Mushrooms, fresh, 5 medium (remove) * Olive Oil, 1 1tsp (remove) * *mixed herbs (dried), 1 tsp (remove) * Egg, fresh, 1 medium (remove)
Directions
Slice mushrooms and cook in a non-stick omelette pan.

When almost cooked, add the spinach and allow to wilt.

Remove vegetables from pan.

Whisk egg and egg white together, add the mixed dried herbs (or fresh if you have them).

Warm oil in frying pan and pour in eggs. Cook until almost solid and browned on bottom.

Add the previously cooked vegetables.

Fold omelette in half in pan and transfer to serving dish.
