SOCK-IT-TO-ME CAKECake:1 Box of Betty Crocker Gluten Free Yellow Cake Mix(for non-celiacs, the original recipe used Duncan Hines Golden Butter Cake Mix)4 Large Eggs3/4 Canola Oil1/2 sugar1 C Sour CreamFilling:1/4 C Brown Sugar2 t Cinnamon1 C Pecans, chopped
Blend together all wet ingredients. Add cake mix and beat together until smooth. Mix together chopped nuts, brown sugar, and cinnamon in separate bowl. Grease and flour Bundt cake pan (I generally reserve just a little dry cake mix to use instead of flour). Pour one half (err on the side of less) batter into prepared pan. Sprinkle filling over batter. Cover filling with rest of batter. Bake at 350 for one hour -- it comes out perfect! Cool on rack before removing from pan. Cake makes 12 generous servings.
