Cauliflower Soup

Ingredients
Cauliflower large head cut into florets1 Parsnip peeled and into pieces1 large shallot1 Tbl olive oil1 Tbl butter2 Tbl whole wheat flour8 cups chicken broth1 cup 1% milk2 Tbl parm. cheese
Directions
Saute shallots in olive oil and butter, add cauliflower florets and parsnip pieces continue to cook for a few minutes, add 2 tbl flour and cook for 2-3 minutes pour in broth and simmer until vegetables are soft. Puree in batches until smooth, return to pot and add cheese and milk. Warm through and serve. Makes 8-10 servings
