Pineapple Cake

Ingredients
Cake:2 c. sifted flour2 c. sugar20 oz. crushed pinapple, undrained2 eggs1 t. baking soda1 t. salt1 t. vanilla extract or lemon juiceFrosting:8 oz. cream cheese1 stick butter2-3 c. powdered sugar1 t. vanilla extract or lemon juice
Directions
Mix all cake ingredients in a bowl. Bake in a greased 9" x 13" pan at 325 for 30-40 minutes, or till toothpick inserted in center comes out clean.
Meanwhile combine all frosting ingredients, adding enough powdered sugar till desired constistancy.
Frost cake while still warm- so it doesn't tear cake.
