Cabbage Lentil Soup

1 cup green or brown lentils1 cup celery, chopped1 cup onion, chopped1 cup carrots, sliced3 Knorr vegetable bouillon cubes10 cups water2 tsp curry powder1 tsp cinnamon4 bay leaves4 cloves1 inch fresh ginger rootsprinkle of cayenne pepper (optional)4 cups green cabbage, chopped1 cup cauliflower, chopped1 cup low salt canned diced tomato w/juice1 tsp dried oregano1 tsp dried basil
Add all ingredients thru cayenne pepper to soup pot and bring to boil; reduce to simmer until lentils are almost done (about 15 min) Then add cabbage, cauliflower, tomatoes, basil, oregano and simmer another 10 min or so until cabbage is cooked (lentils should be done at this point too)
Remove bay leaves, cloves and ginger before serving.
Makes about 8 two cup servings. Good for the whole week!
