Beef and Black Bean Chili

1 lb lean ground beef1/2 red onion (diced)2 cans diced tomatoes (fire roasted)1 can black beans (drained)2 tbsp chili powder2 tbsp fresh crushed black pepper2 tbsp sea salt2-4 cloves garlic (crushed, to your taste)1 tsp corn starch
Cook ground beef, onion, and 1 tbsp of salt in pan (or bottom of chili pot) on medium-high heat until beef is fully cooked and onions are soft.
Add diced tomatoes and beans, chili power, black pepper, and the rest of salt. Reduce heat to medium-low to a simmer.
In a separate small bowl, mix 1 tsp starch and 2 tbsp of *cold* water until completely mixed. Stir into simmering chili.
Add crushed garlic and stir in well. Continue to simmer for 15 minutes, stirring occasionally. Turn off heat and allow chili to cool for 5 minutes before serving.
Thick enough to serve without cornbread. Omit corn starch if you want a runnier chili. Makes 6-8 servings.
