Lisa's Fried Rice Pilaf

2 Tbsp Sesame Oil1 large Onion1 large carrot1 C frozen peas2 cans sliced water chestnuts4 C Cooked long grain white rice2 Tbs Reduced sodium soy sauce
Cook Rice as directed. While Rice is cooking, Chop Onions and carrots. Cook/Thaw peas in Microwave. Heat Sesame Oil in Frying pan, Add Onion and Carrot. Cook until onions are almost translucent. Add Water Chestnut and thawed Peas. Stir. Add cooked Rice. Cover pan and heat on med low until hot - approx 10 minutes. Add Soy Sauce as served.
