Ground Chicken Cottage Pie

Ingredients
1 lb ground chicken1 can low fat cream of mushroom soupcarrots, choppedgarlic, chopped or mincedinstant mashed potatoes, prepared according to directionsbutter
Directions
Preheat oven to 350 degrees.

Saute carrots and garlic for a few minutes, then add ground chicken and brown. Toss with cream of mushroom soup and place in small casserole dish.

Prepare instant mashed potatoes according to directions on box and layer on top of meat mixture, fluffing with a fork so there are peaks of potatoes to get brown and crispy. Top with slivers of butter.

Bake at 350 until top is brown and inside is hot and bubbly, approximately 30 minutes.

    I added peppers to the recipe and cut calories by using spray butter and skim milk for the potatoes. Oh and I also didn't add slivers of butter on top of the potatoes. Yummy! - 4/8/11
