Fiber-filled Chicken Meatballs

73g - onion40g - spinach, squeezed dry & chopped1/4c - fiber one cereal3 cloves garlic1tsp - chicken bullion (granulated)1/2tsp - oregano1tbsp - reduced fat parmesan1/2lb - fit n easy ground chicken
1- ground fiber one cereal with garlic cloves in food processor until it reached a coarse consistency
2- mix cereal with remaining ingredients. May be dry (depending on fat content of meat), spritz with spray butter.
3- roll up 13 balls (the 1 extra is for tasting/snacking/hungry me)
4- cook in oven at 375 for 40 minutes turning occasionally
(5- if you cook on wire rack - which I did to catch the "fat drippings" that never happened - they'll b extra crispy)
