*Hodgson Mill Whole Wheat Flour, 1.75 cup *Fresh Carrot Juice, 1 cup *Vanilla Extract, 1 tsp, 3 tsp Cinnamon, ground, 1 tbsp Baking Soda, 1 tsp **Truvia (Zero Cal Stevia) 1 packet, 4 serving Banana, fresh, 2 medium (7" to 7-7/8" long) )Walnuts, .0625 cup ( 1 TBSP), chopped *Manitoba Harvest Hemp Seed Nut - Shelled Hemp Seed, 1 tbsp Ginger Root, small piece juiced with carrotsBragg's Apple Cider Vinegar, 1 tbsp
Preheat oven to 375 degrees F. JUICE your carrots and ginger to make the equivalent of 1 cup carrot juice. Mash bananas and add all other ingredients and mix together well, but not too much because if you mix too much it will make your muffins too "stiff" and not very moist. Spray a muffin tin with cooking spray ( this recipe will make 7 muffins so you may need 2 tins), fill each muffin " cup" to almost full and bake for 25 minutes or until a toothpick inserted in middle of muffin pulls out clean. Makes 7 medium muffins
