Cream of Broccoli Soup

Canola oilonion, choppedsmall carrot, chopped or gratedcelery stalk, choppedthymebroccoli floretsfat free chicken brothlemon juicefat free milksalt and ground pepper (optional)
1. In a large saucepan over medium heat, heat the oil. Add the onion, carrot, celery, thyme and cook, stirring occasionally, until the vegetables are softened, 5 minutes. Add the broccoli and broth. Increase the heat to high and bring to a boil; reduce heat to medium-low, cover and simmer until the broccoli is tender, 25 minutes. Remove from the heat and add the lemon juice. Let cool 10 minutes.
2. Transfer to a blender/food processor in batches and puree to smooth. Return to saucepan over medium heat. Add the milk, salt and pepper, cook, stirring occassionally until hot.
