Grandma's Cabbage Soup

Ingredients
* Cabbage, fresh, 1 head, large (about 7" dia) * Onions, raw, 1 large * Celery, raw, 4 stalk, large (11"-12" long) * Carrots, raw, 1 cup, chopped * Green Beans (snap), 1 cup * Tomato juice, without salt added, 64 fl oz * Green Peppers (bell peppers), 1 cup, chopped (typically 2) * Canned Tomatoes, 2 can * *Lipton Onion Mushroom Soup & Dip Mix (Dry Mix), 1.75 tbsp (1 Pkg) * Beef broth, bouillon, consomme, 2 cup * Pepper, black, 2 tbsp to taste * Mushrooms, fresh, 1 cup, pieces or slices * Garlic, 1+ clove * Water, tap, 20 cup (Enough Water to cover)
Directions
Dice or slice all vegetables to desired size. Mix in large stew pot 16 pt or lgr. Add 1 bottle tomato juice or V8. Add enough water to cover typically 2.5 bottles of water. I use the tomato juice jug to do this. Add Lipton Soup Mix, 2 Bouillon Cubes, pepper to taste and any other desired herbs. Heat to a boil on medium. Reduce to slow simmer for 2-3 hours. Until vegetables are to desired texture.
