Curry Chicken

Ingredients
2 oz. of canola oil in large pot1 cup chopped onion3-4 cloves garlic, minced1/4 jabanero pepper3-4 sprigs of fresh thyme added to hot oilCook until onions are clear. Add chicken and start to brownAdd curry powderAdd potatoesAdd about 1-2 cups of water and simmer until sauce is thickened. Salt to taste. Serve with rice.
