Parmesan Crusted Bran Flake Chicken

24 oz Chicken Breast pounded to one inch thickness and cut into six 4 oz servings11/2 cups bran flakes (crushed in food processor)2 TBSP grated parmesan1 egg and 1/8 cup milk beaten together2 TBSP butter melted Pepper if desired Do not add salt (the cheese is salty enough)
Preheat oven to 450 degrees F.
Lightly beat egg and milk. In another bowl mix Parmesan cheese and bran flakes. Dip each chicken piece in the egg mixture and then dip into the bran flakes mixture, patting well to ensure the mixture adheres to the chicken. Place the chicken on a lightly oil sprayed pan (I use reynolds release and no oil). Drizzle melted butter lightly over each piece of chicken. (The added flavor is worth it!) Bake about 20-25 mins or until internal temperature reaches 165 degrees F.

I much prefer this to the more common cornflakes coating used for baked fried chicken.
The only adjustment I made was to bake for 15 minutes at 450 then lower the oven to 350 and bake 15-20 minutes more as needed until done. I found this kept the chicken juicier while making the coating crispy. - 4/13/21
