Chicken Leek and Wild Rice Soup

Ingredients
I leek, medium, chopped - white and green3 carrots, washed and chopped3 celery stalks [I use 6 upper portions with leaves]1/2 cup brown rice, uncooked1/2 cup wild rice, uncooked2 ounce jar chopped pimento1.2 pounds of raw chicken breast, cut into bite-size cubes1 32-ounce carton [4 cups] chicken broth4 cups filtered water* Spices as preferred: 1 tsp. dried basil 3 bay leaves 1 tsp. dried rosemary 1 tsp. minced garlic 1 tsp. black pepper
Directions
Makes 8 servings
Layer chopped vegetables, rices, pimentos, chicken cubes in 6 quart crock pot. Add broth, water and spices. Stir.
Cook about 2 hours on high; reduce to low and cook another 6 hours.
