1 1/2 C. Whole Wheat Flour1/2 C. Natural Sugar1/2 C. Yellow Corn Meal1 tbsp Baking Powder1 1/4 C. Unsweetened Soy Milk3 tbsp Ground Flax Seed1/3 C. Vegetable Oil3 tbsp Smart Balance Light Buttery SpreadPreheat oven to 350. Grease or paper-line muffin pan (I use a six-muffin pan).Mix in small bowl, 3 tbsp flax seed with equal parts water. Let sit. Combine flour, sugar, corn meal, and baking powder in medium bowl. Combine soy milk, flax seed mixture, vegetable oil, and butter in small bowl; mix well. Add to flour mixture; stir just until blended.Fill the pan (8 by 8) and bake for 18-20 minutes or until wooden picked inserted in center comes out clean. Cool for 5 minutes. Serve warm.
Makes 9 pieces of cornbread.
