Low Carb Cauliflower "potato" salad

1 medium sized head of cauliflower8 eggs, hard boiled and chopped1/2 C mayonnaise3/4 C. celery chopped8 slices (about 1/2 lb) bacon, cooked and crumbled1/2 C. bacon grease reserved from fryingsalt and pepper to taste
Steam whole cauliflower in about two inches of water, covered with lid, for about 15-16 minutes until cooked.
Boil eggs to hard boiled.
Fry bacon until crispy and reserve leftover grease.
Chop celery to fine chop
When cauliflower is cooked, break into small florets and put in large bowl. Add chopped celery.
Mix bacon grease and mayonnaise and whisk until mixed well. Add to cauliflower and mix gently until covered.
Add chopped eggs and crumbled bacon.
Salt and pepper to taste and enjoy!
