Slow Cooker Santa Fe Chicken Soup

Ingredients
One whole roasting chicken1 15 oz. can diced tomatoes with green chilies2 15 oz. can diced tomatoes1 15 oz. can black beans (reduced sodium)About 2 cups chicken broth1 small chopped onion (about 1/2 cup)3 tbsp. chopped cilantro1 tsp. garlic powder1 tsp. cumin powder1 tsp. cayenne pepper (optional, of course!)Salt and pepper to taste
Directions
Combine chicken broth, black beans, tomatoes, cilantro, onions, garlic powder, cumin powder, cayenne pepper, and salt in the crock pot. Season chicken with salt and pepper, then lay on top. Cook on low 10 hours or on high for 6 hours. Half hour before serving, remove chicken, de-bone and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve with rice or corn bread (calculated extra).

    This recipe is soooo good! I did add a can of drained corn (I know, not as healthy) & instead of slow cooking a chicken bcuz I needed it quick, I used a roasted chicken from our local grocery store & shredded it, added to the pot. This will be one of my favorite tasty, quick DO recipe!! - 11/1/16

    When I lifted the cooked chicken out of the pot, it disintegrated and it was difficult to remove all the bones. I left out the cayenne pepper and found that it had just the right amount of heat with the tomatoes and green chilies.Tasty, but I was nervous about eating small bones. - 3/20/15
