Buckwheat No-Bake Peanut Butter Bars

[Dry (use scant measurements)]1 3/4 c rolled oats3/4 c raw buckwheat groats1/4 c pumpkin seeds1/4 c sunflower seeds1/4 c chia seeds1/4 c unsweetened coconut1/8 c finely ground flaxseed[Wet (use generous measurements)]1/2 c brown rice syrup1/3 C creamy peanut butter1 tsp. vanilla extract
Mix all dry ingredients together in a large bowl.
Mix together the wet ingredients in a separate, microwave safe, bowl.
Microwave the wet ingredients for approx. 20-30 seconds or until they mix together easily (this will make the ingredients easier to mix).
Pour wet ingredients into dry and mix well until everything is well distributed
Place the mixture into a shallow pan and flatten down.
Cut them into bars (will make 10 to 12). No worries if they’re still crumbly, they’ll bind in the fridge.
Store them in the fridge—either in the pan or in individual wrappers.
