Spelt Yeast Bread

650 g Spelt flour600 ml Water (warm -- 40 degrees Celsius)25 g yeast50 g Flax Seeds50 g Sunflower Seeds3 tsp Salt
Measure out Spelt flour into your stand-mixer's bowl. In a separate bowl, measure out 600 ml warm water, and to it add the yeast. Swirl it around with a spoon, then add to flour. With a spoon, just roughly mix the yeast-water mixture into the flour and let sit for 10 minutes. Then add your seeds and salt on top of the flour, and mix on low speed in your standmixer for 3 minutes.
Place dough in a parchment paper-lined loaf pan, and flatten top surface smoothe. Place into cold oven, then turn on oven to 480F. Remove 1 hour later or when tapping top of loaf with a wooden spoon makes a hollow thumping sound.
Let cool and enjoy.
